An important property of probiotics is their antagonistic or antibacterial action against pathogens. This is achieved by competitive exclusion and/or production of bacteriocins or bacteriocin-like substances and organic acids, thereby regulating the gut microbiota. Probiotics are being used widely as one of the key solutions to restore the balance of the gut microbial ecosystem by controlling pathogens and promoting beneficial functions of the gut, thereby improving or preventing intestinal or systemic disease phenotypes by controlling pathogens and promoting beneficial functions of the gut. Lactic acid bacteria have different in vitro antibacterial mechanisms. The antagonistic activity in liquid media is favored by rapidly diffusing anti-microbial compounds, including organic acids and co-aggregation of different indigenous bacteria with pathogens. Antagonistic activity of probiotic strains is mainly attributed to the production of metabolites such as organic acids, hydrogen peroxide, ethanol, acetaldehyde, acetoin, carbon dioxide, reuterin, and other bacteriocins, as well as competitive exclusion, immune regulation, stimulation of host defenses, and production of signaling molecules that trigger changes in gene expression.

The mechanisms underlying the antagonistic effects of probiotics on various microorganisms include the following:
Bacteria can produce a variety of antimicrobial substances. In terms of the maintenance and improvement of intestinal microbial balance, many studies have primarily focused on the antagonistic effects of probiotic isolates against pathogens as important criteria for selecting probiotics.
